This Summer, have your Young Chef join our virtual cooking camp focusing on food, fun and fundamentals while creating delicious family friendly menus each week. This Summer, have your Young Chef join our virtual cooking camp and learn life-long skills while having fun creating delicious family friendly menus. Each week, kids will cook along with Chef Jessica Roberts in real time and learn about kitchen safety and cooking fundamentals. Sign up for as many classes as you like with discounts given for multiple registrations. For our first Young Chefs Summer class, we'll be exploring bright, fresh flavours with a comfort food flair that the whole family will love. On the menu is a Cheesy Pesto Pasta Bake and Chocolate Cupcakes with Fresh Raspberry Buttercream. (Some parental supervision recommended)

This live, online class will be hosted on Zoom. You can download the app on your phone/tablet, or go to zoom.us on your computer and join in, it's free.

What you will need:

Ingredients (Serves 4):

  • 1 cup ricotta cheese
  • ½ cup grated Parmesan (fresh Parmesan)
  • 225 grams mozzarella
  • 1/4 cup unsalted butter, softened
  • ½ cup fresh basil
  • 1 small onion
  • 3 cloves garlic
  • 1/4 cup fresh raspberries
  • 454 grams pasta (rotini, penne, fusilli)
  • 1 cup basil pesto (jarred or prepare recipe below in advance-omit pine nuts if desired)
  • 1 28 oz (796 ml) can diced tomatoes
  • 2 tbsp olive oil
  • 1 1/2 tsp vanilla extract
  • 1 3/4 cup icing sugar
  • 1 1/2 cups flour
  • 1/4 cup unsweetened cocoa powder
  • 1 cup +1/2 tsp sugar
  • 1 tsp baking soda
  • 1/2 cup vegetable oil
  • 1 tbsp white or apple cider vinegar
  • Salt
  • Pepper

 Equipment:

  • Paring knife
  • Cutting board
  • Large pot (for cooking pasta)
  • Small saucepan
  • Oven safe casserole dish (approx 8x8”)
  • 12 cup muffin tin
  • Cutting board
  • Chef knife
  • Measuring cups & spoons
  • Liquid measuring cup
  • 2 large mixing bowls
  • Large colander/strainer (for draining pasta)
  • Stand mixer or electric beaters (for icing)
  • Piping bag with tip or Ziploc bag
  • Wooden spoon
  • Rubber spatula
  • Whisk
  • Can opener
  • Oven mitts
  • Paper baking cups or cooking spray/vegetable oil for greasing muffin tin
