This Summer, join Cookery for a trip around the World for a culinary adventure. Each week, Teens will explore the food and flavours in globally-inspired classes and make dinner for their family.  Our first stop on our culinary adventure is Thailand. Discover the four flavours of Thai food: Sweet, Salty, Spicy (not too spicy!) and Sour with Chef Jessica Roberts. Together in real-time, we'll make traditional Shrimp & Tofu Pad Thai, a refreshing Thai Cucumber Salad and Lime Coconut Tartlets for dessert. (***You can substitute chicken for the shrimp or use all tofu if desired).

This live, online class will be hosted on Zoom. You can download the app on your phone/tablet, or go to zoom.us on your computer and join in, it's free. 

What you will need:

Ingredients (Serves 4):

  •  ¼ lb (120 grams) peeled shrimp (or can substitute boneless skinless chicken breast or tofu)
  • ¼ lb (120 grams) extra-firm tofu
  • 7 eggs
  • ½ cup butter
  • 1 small head Napa cabbage
  • 1 cup mung bean sprouts
  • 1 lb (454 grams) English cucumbers (about 2 medium)
  • Small bunch fresh cilantro
  • Small red onion
  • 3 green onions
  • 1 clove garlic
  • 8 limes
  • 1 lemon
  • 4 oz (120 grams) fettuccine-width rice stick noodles
  • 1 to 4 tbsp tamarind paste
  • 1 cup roasted peanuts (optional if food allergies)
  • ¼ cup fish sauce (vegetarian substitute: 2 tbsp each soy sauce and rice vinegar OR vegan fish sauce)
  • ¼ cup canola oil
  • ⅓ cup honey
  • 2/3 cup rice vinegar
  • ½ teaspoon red pepper flakes
  • ¼ cup desiccated coconut
  • 1 can (300 ml) sweetened condensed milk
  • 1 cup flour
  • ¼ cup icing sugar
  • ¼ cup granulated sugar
  • ½ tsp vanilla
  • Salt
